Classic Christmas Snowball Recipe

Ingredients:
300ml Vanilla Ice Cream
100ml Lemon Juice
500ml Diet Lemonade
½ tsp Ground Cinnamon
60g Red Currants
10g Mincemeat
25g Sugar
25ml Water
What You'll Need:
Saucepan
Wooden Spoon
Jars
Strainer
Measuring Jug
Mixing Bowl
Cocktail Glasses

SHOP WHAT YOU'LL NEED
Step 1. For the syrup, add the water and sugar into a saucepan, and place on a hob on medium heat until the sugar dissolves, stirring occasionally with a wooden spoon.
Step 2. Leave it to cool down and then pour into a jar.

Step 3. Add in the mincemeat, cover the top, and leave to infuse overnight.
Step 4. Strain the mixture and reserve the syrup.
Step 5. Grab a measuring jug and measure out 10ml of the syrup.

Step 6. Mix in the syrup in with the vanilla ice-cream, lemon juice and diet lemonade into a mixing bowl, until white and frothy.
Step 7. Pour into cocktail glasses and dust the top with cinnamon. Top with the red currants and serve!
