Easy Egg Fried Rice For A Quick Meal

Egg Fried Rice

Packed with many veggies, this is the perfect 'bowl food' to enjoy after school, either as a snack or a main evening meal. A simple yummy dish to cook is a great way to use up leftover rice. This filling dish will fill your stomach after a long day out. Its delicious taste and bright colours will make this appealing for children to get their vegetables in.

Ingredients:

  • 1 tsp rapeseed or groundnut oil


  • 2 cups (or whatever amount you fancy) leftover, cooled rice


  • 1 or 2 eggs (depending on the amount of rice you have), whisked together


  • a drizzle of sesame oil & soy sauce (optional)


  • selection of veg such as mangetout, baby corn, sugar snaps, peppers, frozen peas, frozen edamame

Fried Rice Recipe Steps:

  1. Place the oil in a heated large frying pan over a medium heat
  2. Chop up the vegetables into small pieces
  3. Toss the veggies in and cook for 1-2 mins
  4. Add the rice and stir fry everything together for another minute or two, then add the eggs, stirring all the time
  5. When the eggs are set, season with the sesame oil and soy sauce if desired
  6. Scoop the finished fried rice into a bowl and serve while hot
