Super Simple Turkey Chilli

You will need:

Ingredients:

  • 900 grams Turkey Mince
  • 1 Onion
  • 2 Garlic Cloves
  • 1 tablespoon Olive Oil
  • 3 cups Water
  • 140g Tomato Puree
  • 800g Passata
  • 1 can Kidney Beans
  • Salt
  • Pepper
  • 2 tablespoons of Chilli Powder
  • 2 teaspoons of Cumin

Recipe:

  1. Add olive oil to a hot pan and add garlic and onion and sautè until tender.
  2. Add the turkey and cook until browned
  3. Add this mixture to your slow cooker
  4. Add the remaining ingredients and stir until mixed
  5. Place the lid on the slow cooker and cook on high for 3-4 hours, or cook on low for 6-8 hours

Chickpea Coconut Curry with Sweet Potatoes

You will need:

Ingredients:

  • 1 teaspoon Olive Oil
  • 1/2 Onion, chopped
  • 1 Garlic Clove
  • 1 tablespoon of Minced Ginger
  • 1 can of Chickpeas
  • 1 can of tinned Chopped Tomatoes
  • 1 Sweet Potato, peeled and diced
  • 1 can Light Coconut Milk
  • 240ml Vegetable Broth
  • 1 tablespoon Garam Masala
  • 1/2 tablespoon Curry Powder
  • 1 teaspoon of Salt
  • 40g Spinach

Recipe:

  1. Heat oil in a pan and sautè onion, garlic and ginger until tender
  2. Transfer the mix to slow cooker and add the remaining ingredients (except for the spinach)
  3. Heat on low for 6 hours, or high for 4
  4. Before serving add spinach and heat for about 5 minutes
  5. Serve over rice

Slow Cooker Jambalaya with Chorizo, Chicken & Prawn

You will need:

Ingredients:

  • 1 teaspoon Olive Oil
  • 2 Chicken Breasts
  • 225g Chorizo, sliced
  • 1 tin Chopped Tomatoes
  • 1 Onion, chopped
  • 1 Red Bell Pepper, chopped finely
  • 2 Stalks of Celery, sliced thinly
  • 2 Cups Chicken Broth
  • 1/2 teaspoon Dried Thyme
  • 2 teaspoons Dried Oregano
  • 1 tablespoon Cajun Seasoning
  • 1/2 teaspoon Cayenne Pepper
  • Prawns (as many/little as you like)

Recipe:

  1. Add olive oil to pan and add chopped onion. Cook until tender.
  2. Add chicken breasts and fry until cooked through
  3. Add chicken mixture to the slow cooker and add all other ingredients, except for the prawns
  4. Cook on low for 7-8 hours (or high for 4-5 hours)
  5. Before serving, add the prawns and cook for 15 minutes further, until the prawns are pink and cooked through
  6. Serve over rice
